Jean’s Curry

An old family favourite, this recipe was created by Angus’ Grandmother Jean.

Ingredients:

2 KG Diced beef

2 onions

3 cooking Apples

125 grams raisins or sultanas

2 cups of water

2 beef stock cubes or 2 teaspoons of stock powder

3 or 4 bananas

2 tablespoons coconut

2 teaspoons ground ginger

2 teaspoons cinnamon

2 tablespoons curry powder

400ml can Coconut cream

2 teaspoons/cloves of Garlic

1 teaspoon Tumeric

Chilli to taste if you prefer a hotter curry.

125 grams fruit chutney.

Method:

Roll diced beef in flour. Brown meat in a pot and then remove.

Chop apples, bananas, garlic, Chilli (if using) & onions and brown. Add raisins, coconut, curry powder & spices & mix well together. Add water & Stock powder or cubes and stir till boiling. Add browned meat and cook slowly for 1 to 1 1/2 hours.

Add chutney and more water if necessary. Thicken if necessary.

Add coconut cream before serving.

Serve with Rice. Enjoy
